Weekly Challenge #3

First, I would just like to say that I met my challenge goal for last week.  I did yoga one day, went to the gym twice and did the elliptical, and I went running yesterday (more on that tomorrow).  I really want to try to keep this habit up.

For this week I'm challenging myself to eat three servings of fruits and veggies a day.  I know the recommended amount is 5-6 servings, but I'm lucky if I get one, maybe two.  This is something I really struggle with because I'm not a huge fan of veggies.  But I do love fruit.  Really, I'm just a picky eater.  Now I'm just concerned that I won't have enough to last me the week!

What are your favorite ways to get your fruits and veggies in?

    I'm a picky eater too! I like my apples and bananas when it comes to fruit, but I'm definitely lacking in the vegetable category! Good luck with your challenge, I should really try this out too.

  2. Mmm veggie soups, salads, and stir frys are a nice way to get lots at once. Or one SPICY V8, yum yum! I love veggies (says miss vegetarian) but the truth is, sometimes.. butter helps..

  3. Joseph doesn't like veggies. So, he drinks V8 Fusion--it tastes like fruit juice but has a full serving of veggies in it!
